There are many different types of wheat breads on the market. How can I tell if I am buying whole wheat bread?

The key words to look for on the ingredient list are "whole-wheat", "100% whole wheat flour" or "whole wheat flour". Whole wheat food products are made from all the original components of wheat: the inner layer (germ), the middle layer (endosperm), and the outer layer (bran). Terms like "enriched wheat flour", "unbleached wheat flour", and "wheat flour" are different terms for whole wheat flour that has been processed into white flour. Much of the germ and bran are removed during processing, leaving only the starchy endosperm. Some, but not all, of the nutrients that were stripped away during processing have been added back. This is not to say that foods made with white flour are bad for you. But, nutritionally speaking, whole wheat foods are the better choice.
