PEPPER KING'S CHUNKY SALSA
(1/8" pieces--nothing is minced)
- 8 oz. lime juice
- 8-12 oz. lemon juice
- 1 tablespoon vinegar
- salt to taste
- 1 teaspoon brown sugar
- dash Cummin
- dash Corriander
- Black Pepper to taste
- 10 Red Santa Fe Grande peppers ( diced 1/8" )
- 10 Yellow Santa Fe Grande peppers ( diced 1/8" )
- 10 Green Jalapanos thinly sliced ( circles )
- 2 Large Onions ( 1/8" )
- 2 Bundles Cilantro ( chopped )
- 2 Stalks Celery sliced ( half moon cross section shape )
- 2 Med to Large Carrots ( chopped 1\16" )
Mix to gather in large bowl, let stand 1/2 hour.
NOTE: I didn't forget the tomatoes; add to taste, but try it with out
them.
