MISSISSIPPI CAVIAR
- 1 can black-eyed peas, drained
- 1/4 cup cider vinegar
- 1/4 cup salad oil
- 1 small onion, chopped finely
- Tabasco sauce or chopped red or green hot pepper to taste
Mix and marinate at least 8 hrs. Serve with snack crackers.
