Quick & Easy Lasagne

1/2 lb. lean ground beef or turkey
sausage -- casing removed
1 30 oz. jar spaghetti sauce (any flavor)
2 cups sliced mushrooms -- Optional
1 cup water
1 container ricotta cheese (15 oz.)
1 egg
1/2 teaspoon salt
1/4 teaspoon pepper
8 oz. lasagna noodles (9-10 noodles) -- uncooked
2 cups mozzarella cheese -- shredded
1 cup grated Parmesan cheese -- divided
In large skillet over medium-high heat, cook meat, stirring, until lightly
browned. Add spaghetti sauce, mushrooms and water. Bring to boil; reduce
heat and simmer 5 minutes. In small bowl combine ricotta, egg, salt and
pepper.
Spoon 1 1/2 cups of sauce into
13 x 9 x 2 inch baking dish; top with half the uncooked noodles, all of
the ricotta mixture, 1 cup mozzarela, 1/2 cup Parmesan cheese, 1 1/2 cups
sauce and remaining noodles. Top with remaining sauce,mozzarela and Parmesan.
Cover. Bake in 350F oven 45 minutes. Remove cover; bake 15 minutes longer.
Let stand 15 minutes before serving.
NOTES : I use aluminum foil to
cover this with, just be sure to cover it tightly. I personally don't use
the mushrooms. I also use extra mozzarela cheese. The 15 minutes when it
is standing is a great time to throw some garlic bread into the oven.
LASAGNA FROM TONY'S AT DISNEY
WORLD

1 tb Olive oil
1 lb Ground beef
1 c Finely chopped onion
1 Cove garlic, finely chopped
1 t Salt
1/4 ts Mixed Italian seasoning
1/2 ts Oregano leaves
1/4 ts Thyme
1/2 ts Spanish paprika
2 c Tomato puree
1/2 lb Lasagne noodles
2 qt Water
1 tb Olive oil
Salt to taste
1 1/2 c Ricotta cheese
1 Lg egg
Tabasco sauce to taste
3/4 ts Salt
CHEESES FOR FINAL ASSEMBLY
3 oz Mozzarella cheese, sliced
3 tb Grated parmesan cheese
1 c Grated mozzarella cheese
Heat olive oil in saucepan. Crumble
in ground beef and saute until beef is browned. Drain off excess fat. Add
remaining ingredients and mix well. Continue cooking for 5 minutes. Set
aside. Cook lasagne noodles in the boiling water with olive oil and salt.
About 9 minutes. Drain and let cool. Set aside. Combine all ingredients
in blender or electric mixer and mix well at medium speed.
Assembling: In a 13x9x2-inch casserole
spread a thin layer of meat sauce on bottom and put one layer of cooked
lasagna noodles. Next, a layer of sliced mozzarella and on top of that add
1/3 of the meat sauce, then 1/2 of the rocotta mixtu Continue to layer until
all ingredients are used. Top with grated Parmesan cheese. Bake at 350F
for 40-45 minutes.
