GROUND BEEF WITH HOISIN AND GINGER

Combine orange juice and cornstarch in small bowl and set aside.

Saute meat in large skillet over med-high heat until cooked through; break up with a fork. Drain off excesss juice and fat, and set aside.

Add sesame oil to skillet and stir-fry ginger, garlic and orange peel (optional) briefly. Add green onion and stir-fry 1 minute. Return meat to skillet and add hoisin; stir until blended. Add orange juice mixture and stir until thickened (about 1 minute).

Spoon onto rice or couscous; this can be flavored with chicken stock while cooking.

Serve immediately.
