4 slices bacon, cut in 1" lengths
2-1/2 to 3 lbs. lean stew meat
salt and pepper
8 oz. mushrooms, quartered
1 large onion, sliced
1 Tbsp. paprika
1/2 cup dry red wine (burgundy is good)
1 can beef broth
1 small jar gherkins, cut in half (recipe didn't say sweet or dill; I used sweet midgets)
hot cooked rice
Fry bacon and remove. Salt and pepper stew meat and brown in bacon drippings. Set aside. Sauté onion and mushrooms in drippings, adding 1 Tbsp. oil if necessary. Combine all ingredients except gherkins, bacon and rice in crockpot and cook for 4 hours on high or 6 hrs. on low. Stir in some flour mixed with water to thicken juice if necessary. Stir in pickles and bacon. Serve over hot rice. Makes 4 - 6 servings.
(This is so DELICIOUS, you will never want to make "regular" beef stew again!)
