CALICO BEANS
My sister gave me this recipe many years ago and it's a family favorite!!
2 cans Pork and Beans or baked beans (any variety you prefer; I use Bush's Best Baked Beans)
1 can small green lima beans
1 can large butter beans
1 can red kidney beans
Drain all but the Pork and Beans and place all beans in crockpot and turn on high.
Cut 1/2 lb. bacon into small squares, about 1" wide. Cook in skillet until nearly crisp. (You could use lowfat or turkey bacon.) Remove bacon. Discard all or nearly all drippings. Chop 2 medium onions and sauté in drippings or oil. Drain if desired.
To onions, add:
1 tsp. dry mustard
1 tsp. garlic powder
1/2 cup mild vinegar
1/2 cup brown sugar
Return bacon to mixture. Simmer 5 minutes. Add mixture to beans in crockpot and cook for 3-4 hrs. on high or for 6 hrs. on low.
GUSSIED UP BEANS
This was Mother's favorite beans recipe.
1/2 stalk celery, chopped
2 bell peppers, chopped
2 large onions, chopped
1 clove garlic, chopped
1/2 cup molasses or dark syrup
1/4 cup salt pork, chopped
1 cup catsup
2-1/2 Tbsp. mustard
2 T. steak sauce
1/2 each salt and red pepper
2 (No. 1) cans pork and beans
Sauté vegetables. Put all ingredients in crockpot and cook for 6 hrs. on low. Serves 10.
