Excellent Carrot Cake
Blend in a large bowl:
- 1 1/2 Cup Oil
- 4 Eggs
- 2 Cups Grated Carrots
- 1 Cup Crushed Pineapple
Mix in:
- 2 Cups Sugar
- 2 Cups Flour
- 1 tsp Salt
- 2 tsp Cinnamon
- 2 tsp Baking Soda
Grease and flour three 9" cake pans (just two will work as well.) Batter will be thin. Bake at 350 degrees for 25-30 minutes. Let cool in pan 10 minutes before removing.
Icing:
- Total of 11 oz of cream cheese (1 - 8 oz and 1 - 3 oz package)
- 1 stick Butter or Margarine
- 1 box Powdered Sugar
- 1 tsp Vanilla
- 1/2 tsp Butter Flavoring (optional)
- 1 Cup Chopped Pecans or Walnuts (optional)
